Sunday Evening at the Lake

Watching my children growing up is bitter sweet. I really miss those times when they were little. Especially when they were all at home and not out driving on the California freeways! But, at the same time it is a blessing to see them growing into young men and women. They're making their own decisions, developing their talents and choosing the path God has for them. I am thankful they are all seeking God for His leading and direction for their lives.

Jimmy, my 11 year old and still my baby, had decided before summer that he wanted to be baptized. So when our church had a baptism service this past Sunday at the lake ... we went!

Jimmy wanted his Sunday School teacher to baptize him.

What a blessing it was to watch Jimmy walk out there, pray and be baptized!

Well, at least I still have another little one!

Summertime Blessings!

Since this is the first official week of summer, I thought I would do a post about all of the fun summertime activities. I want to be sure that we (our family) enjoy those activities that are just unique to summer. In other words, make some memories! I made a list of some of the things we would like to do. I don't know if we will be able to do everything on the list, but I will be making a special effort to plan some of these things that we can do together!

Beach day
watching fireworks
summer camp
baseball games
outdoor concerts
visiting an amusement park and visiting a national park!

Some simple things such as watching meteor showers late at night, reading a good book, gardening and growing summer vegetables, eating meals outside on the patio, wearing flip flops and just relaxing!

Eating summer foods like corn on the cob, strawberry rhubarb pie, homemade ice cream, hot dogs, watermelon and making smores!

These activities just make me think of summer!

Special times with our families don't just happen, they have to be planned on purpose! We need to make the time to enjoy life's simple pleasures! I hope everyone has a great summer and will be making lots of lasting memories!!!

Strawberry Freezer Jam

Every year about this time, when strawberries are in season and on sale, I like to make no cook strawberry freezer jam. It is so simple to make and my kids love it! I like to use this brand of fruit pectin because it only uses 1 1/2 cups of sugar.

Mix sugar and pectin together until well blended.

Stir the sugar & pectin mixture into 4 lbs. of crushed strawberries for 3 minutes. (The directions are on the package).

Fill jars and that's it! I would of had more jam, but my little helper kept eating the strawberries! You can use tupperware type containers, as well. Keep them in the freezer until ready to eat. I'm already making a second batch! It's fun to have strawberry jam from the freezer in the middle of winter, if it will last that long!

Three Years Ago Today!

“Like cold water to a thirsty soul is good news from a distant land.” Proverbs 25:25

When we first started the adoption process, China referrals were only taking 6 months. By the time we received ours, we had waited 19 months! When the call came three years ago today, we were overjoyed. An email followed with pictures and more information. This is the first photo we saw of her.

We knew in an instant she was meant to be our daughter.

Kong, Ci Song was born on July 27, 2005 and was found on July 27, 2006 by the water fountain in front of an eyewear store
in Guiyang City. She had a little blanket with her. After police investigated and could not find her parents she was taken to
the Guiyang Children's Welfare Institution. She was examined by a doctor who found her to be healthy. She was then placed in a foster home. Her name “Ci” means gentle, “Song” means to praise.

The foster family took special care of her and observed a normal growth. She could walk without help at 13 months and she has a big appetite. She loves to take a bath and her personality is outgoing and active. She often laughs and enjoys playing with other kids. She also likes to listen to music and watch cartoons. She has tons of energy. She likes to play outside, and go shopping. Her favorite game is hide and seek. She loves dolls.

These are the earliest photos we have of her.

We wonder about her first year of life. That's something we will never know.

Our little girl today! We can't imagine our family without her. We believe God planned for her to be a part of our family before she was even born.

Graduation Blessings!

Last night our daughter, Jessica graduated from High School! It was a very momentous occasion! We are so proud of her! Jessica is truly beautiful on the inside, as well as on the outside. She loves the Lord and has a sweet and caring spirit for others. She has a continuous smile and yet can be a complete nut! We love you, Jessica!
