Spaghetti Ice Cream - Yum !!!

My oldest daughter Jaime is attending college in Spain this semester. Jaime and her friends like to eat ice cream and gelato, but they just tried something new . . . spaghetti ice cream!!!  It's not spaghetti flavored ice cream, but it is actually vanilla ice cream squeezed through a pasta-type machine to make it look like spaghetti.  It has a strawberry topping to resemble tomato sauce and then it's sprinkled with white chocolate shavings to look like parmesan cheese! Jaime said it was amazing!

We really miss our sweet daughter and it's hard with her being so far away! I know she is having a wonderful time though. She is getting to see so much . . . in fact, she's going on a field trip to Ireland this week! She has already visited London and is planning a trip to Paris! I think when she finally arrives back home, she will be quite bored! 

Happy First Day of Fall!

Fall is my favorite season of all! Of course, living in the desert we don't get to experience such vibrant color changes
as this. . . but, thankfully there are places nearby that we can. We're hoping to go apple picking in the local mountains soon. That has always been a family tradition! In fact, Jaclyn keeps asking when we can go and pick apples. . . and make applesauce!

It's still hard to feel like it's fall right now because it has been so warm, but thankfully the evenings have been cooling off. I'm sure I'll be getting out the flannel sheets and blankets soon!

I've also been getting out all of my fall decorations, so that is starting to put us into the fall mood. I'm so excited for this new season!!!

Cheese Cake with a View!

My oldest son Josh is a chef.  This past week he worked as the chef for a private train trip along the coast of California. He even used his mom's cheese cake recipe - which was a big hit!!!

He drizzled it with a raspberry sauce....and added the mint for presentation.

So I thought I would share my cheese cake recipe. It's one I've made for years and it is so easy to make and so delicious!

Cheese Cake

1  1/2 cups powdered sugar

2 - 8oz. cream cheese, softened

2 eggs

1 teaspoon vanilla

Mix above ingredients together and fold in: 1 pint sour cream

Add to graham cracker crust.

Bake for 30 minutes at 350 degrees.

*Turn off oven and keep in oven for 1  1/2 hours.

The beautiful pullman cars... such a nice way to travel!

Josh said that this was the smallest kitchen he has ever worked in... but at least it had a great view!

White China Cabinet

I found this china cabinet at a yard sale a few weeks ago. I thought it would look really cute after it was painted ...white, of course!!!

It was in pretty good shape overall, but the wood had some stains on it. The first thing I did was to clean it ...then prime it ... and then I gave it several coats of flat white latex paint.

I changed the old knobs to vintage glass knobs... then added lace trim to the edges. My husband secured it to the wall because it seemed a little top heavy. Since we live in California ...that's always a good idea!

I'm pretty happy with the way it turned out!

30th Anniversary Blessings

30 years ago today Jim and I were married! He's still my best friend and the most wonderful man in the whole world .... and he still makes me laugh everyday!!!

We met each other and fell in love at Disneyland ... the happiest place on earth!!! I was a waitress and Jim was the comic lead at the Golden Horseshoe Revue.

Jim was the comedian "Pecos Bill " at Disneyland's Golden Horseshoe Revue for 12 years!!!

He was the roughest, toughest, rootin-tootin, shootinest cowboy in the whole west!

After 30 years and five kids later, we're still in love .... and dress funny, too!!!

Happy Anniversary, Jim!!! I love you!!!
