Banoffee Pie

Since all eyes are on England right now and the royal wedding, I thought I'd share about this scrumptious dessert called Banoffe Pie (bananas and toffee)! This pie originated in England, but is also popular throughout Europe. It is one of the most delicious desserts I've ever tasted! It's made from sweetened condensed milk, bananas and whipped cream in a graham cracker crust!

My daughter Jaime tasted this pie while she was studying in Europe last semester. She was fortunate to get the recipe and made it for us when she got home.

There are several versions of this delicious dessert, but the following recipe is the one Jaime brought home with her from the British owned restaurant "Number 8"!  We just made it for Easter and I was reminded again how yummy it is. It's very simple to make!  

Put 2 UNOPENED cans of sweetened condensed milk in a large pan and cover them completely with water.  Bring to boil, cover and simmer for 3 hours. Be sure to check on them periodically, so the water does not boil away! Be sure to KEEP COVERED WITH WATER (or could explode)! Now, Paula Deens Recipe is a little different, as she pours the sweetened condensed milk in a glass baking dish, covers it with foil and puts it in a larger poaching pan with water and bakes for 1  1/2 hours.

After simmering cans for 3 hours DO NOT OPEN! Cool completely! I put them in the refrigerator over night and made the pie the next day.
Make a graham cracker crust and bake before adding the toffee filling.
The sweetened condensed milk caramelizes and becomes toffee after boiling! Pour it (when cooled) into the graham cracker crust.
Layer with 3 sliced bananas.
Cover with whipped cream and more sliced bananas. I added some grated chocolate on top! You could also add strawberries and chocolate chips!
This pie tastes best after it is chilled. Actually, it was even better the next day!

Easter Blessings!

Vintage hats remind me of Easter.
I guess because I always had a special Easter bonnet to wear on Easter to Sunday School!

But, I must say.... that car was even vintage in this photo!

Things Are Sure Hoppin Around Here!

It seems that bunnies have been making appearances all around our cottage!

There are bunnies all over the sideboard! 
There's even a little stuffed bunny sitting upon the sofa!
These bunnies are just the cutest little creatures! Their big eyes and floppy
ears are so adorable!

  This little bunny reminds me of Peter in The Tale of Peter Rabbit.
First he ate some lettuces and some French beans; and then he ate some radishes; And then, feeling rather sick, he went to look for some parsley.
...I am sorry to say that Peter was not very well during the evening. His mother put him to bed, and made some camomile tea;
   Now, the bunnies don't show up until right before Easter! 
 The chocolate bunnies are definitely the sweetest!
But, of all the bunnies....  this is my favorite one of all!

Some Yard Sale Finds

It seems we'll have some warm weather and then it turns cold again. Not too many yards sales yet, but I did manage to find a few treasures.
I found this adorable needlepoint picture for $2.00. I love the colors in it and it will go perfect in our bedroom! I just painted the frame white!
I really love the verse on this picture. It was $3.00. Again, I painted the frame white and distressed it a little. I think it goes well with the needlepoint picture and hopefully I will find a way to display them both together.
I actually found this candelabra last season. It was $5.00. I grabbed it right up! 
I think this little Johnson Bros. plate "Castle on the Lake" is so cute. It was $2.00. The white basket was 25 cents, from last season! I'm really looking forward to finding more treasures as the weather warms up! My husband is always so sweet to take me around on Saturday mornings, after we get some coffee, of course!
